Our "secret" recipe for 40 Bay Street Granola is no longer a secret! So many people have requested the recipe we have finally agreed to share it. Chef Simon created this recipe for us the second season 40 Bay Street Bed & Breakfast was open, and it has been a favourite ever since! Whenever it is baking (one of the many secrets!) people stop and ask what that heavenly smell is.
And guess what? It tastes even better than it smells!
40 Bay Street Bed & Breakfast Granola
4 cups steel cut oats
1 cup walnut pieces (I find they toast the nicest of any of the nuts)
½ cup wheat germ
½ cup pepitas (unshelled pumpkin seeds)
1/4 cup sunflower seeds
¼ cup flax seeds
Mix together in air tight container and store until ready to bake. For each cup of mix, put on greased cookie sheet, sprinkle with 1 tablespoon of cooking oil (I use olive oil) and bake in slow oven (325) for 20 minutes – or longer if you like it really toasty – I would suggest stirring it half way through so the cereal along the outside edges doesn't burn.
Remove from the oven and sprinkle with 2 tablespoons (per cup of mix) brown sugar and stir. When cool, you can put it in another container and use as required.
